I have always loved to sit in ferry and railroad stations and watch the people, to walk on crowded streets, just walk along among the people, and see their faces, to be among people on street cars and trains and boats. ↗

This kitchen is completely calm. Some of the old-fashioned chefs - they become kings in their kitchen, they've got to be called chef. But I don't care if someone calls me chef or Heston, it really doesn't bother me. ↗
When I had no shoes I was comfortable - I used to run barefoot. When I wore shoes it was difficult. To run in shoes was ok, but at the beginning of my career it was hard. ↗
